Somewhat sweet, somewhat nutty. All of these words just as easily describe our Dubliner cheese as they do the city of Dublin itself. So it isn't hard to see where we drew our inspiration. Dubliner is a robust, aged cow's milk cheese with a bit of a hard texture similar to a Cheddar. In one bite you can taste the diversity of flavors - from nutty to sharp to sweet. What might seem ambiguous is actually a well-balanced mix of cheese cultures and naturally occurring amino acids. This diversity pays off in its ability to be served alongside a full-bodied Cabernet, a freshly pulled pint of Guinness, or simply melted between a few slices of crusty brown bread. And on a good day, all three at once. Kerrygold Dubliner with Irish Stout A Classic Combination from the capital city of Ireland, Kerrygold's original Dubliner Irish Cheese and its perfect pair, an Irish Stout, are now together in a new unique cheese. The classic flavor combination brings out the sweet, nutty, rich flavor of Dubliner and swirls and tumbles it together with the malty, caramel, bitter flavor of a perfect pint of Irish Stout. While we (and everyone else) call it Red Leicester, there isn't any white or purple or polka dot Leicester - all Leicester is red. Why this is so is anyone's guess, but we do know our delicious version originates from the town of Newmarket in County Cork. Red Leicester is a mellow flavored cow's milk cheese with a tangy aftertaste. It has a firm body but a flaky texture and substitutes nicely for a rich cheddar. It melts beautifully, making it perfect for recipes and goes well with most food, wine and beer. Or all three at once. Blarney Castle - A Cheese of Historical Proportions Back in the day - way before your father's day when he walked to school in the winter for eight miles uphill, barefoot, one way - cows were as good as currency in Ireland. To protect one of the richest herds and most prosperous pastures of the time, Blarney Castle was built. Now almost 600 years later, our Blarney Castle cheese is produced using the same verdant green rolling hills and sparkling pure streams that meander through these once fiercely protected lands. It would be hypocritical of us to produce a cheese called Blarney Castle without living up to its heritage. So automatically it has to be 100% natural without a speck of artificial flavors or additives. Blarney Castle is a mild and creamy cow's milk cheese with rich and velvety undertones.
