This American Original cheese was created in the tradition of the Crave Brothers Les Freres, their signature award winning farmstead cheese. At first the cheeses are washed daily, and then as they cure, they are washed regularly under the direction of cheesemaker George Crave. Petit Frere has a light tan to orange/brown rind that continues to change as it ages. It has an earthy, fruity flavor and a velvety texture. This particular area where we’re located, however, was once known as “English Hollow” due to a high number of dairy farms owned by English immigrants.
